Announcing 'A Way With Dough: An Inviting Tour of Baking in Four Lessons'
Heavy Table and bakehouse present four classes taught by masters of their delicious craft
Dear Readers,
Every once in a while, the Heavy Table has an opportunity to collaborate with a trusted local partner to put together a special series for your enjoyment.
This winter, we're proud to announce a new project in partnership with the newly opened bakehouse space (4615 Excelsior Boulevard) in St. Louis Park, Minnesota. We call it:
A WAY WITH DOUGH: AN INVITING TOUR OF BAKING IN FOUR LESSONS
Presented by bakehouse and The Heavy Table
Each class is small (a dozen students or fewer), hands on, and features a welcome snack and coffee from bakehouse.
Your instructors are as good as they get: two local bakers with their own successful shops, a pioneering baker with her own burgeoning bagel brand, and a local author with a tremendous first-hand knowledge of Italian food.

CLASS #1: BAGELS WITH MARTHA DURRETT - SATURDAY, JANUARY 18, 10am-Noon
About the Class: Learn to mix, shape, boil and bake bagels from scratch. Students will boil and bake bagels to enjoy during class and leave with new skills, recipes and prepared bagel dough to take home and bake up the next morning for breakfast! Along with the ins and outs of bagel making, students will learn how to make whipped cream cheese schmears to take their breakfast to the next level! No baking and/or bread-making experience necessary.
About the Instructor: Durrett learned to make bagels at Bagelsaurus, an award-winning bagel shop in Cambridge, Mass. As head baker, she perfected the art of bagel making before moving to Minneapolis in 2024. She now runs Cauldron Bagels out of her home, serving up delicious sourdough bagels that you can order on Instagram. When she's not making bagels, she's baking delicious breads and pastries at Honey & Rye!
CLASS #2: FRESH PASTA WITH ERIC DREGNI - SATURDAY, JANUARY 25, 10-11:30am
About the Class: Eric Dregni writes: "Emilia-Romagna has the best food in Italy. Yes, those are fighting words for Italians, but they will grudgingly admit it's true. First comes the fresh pasta, in particular tagliatelle, tortellini, and lasagne. We will talk about the history and kinds of pasta and then make our own fresh pasta."
About the Instructor: Dregni is professor of English, journalism, and Italian at Concordia St. Paul and the dean of the Italian Concordia Language Village, Lago del Bosco. He worked in Italy as a travel journalist and his essays were compiled into a book in Italian, Grazie a Dio non sono bolognese, later translated into English as Never Trust a Thin Cook and Other Lessons from Italy’s Culinary Capital. He’s the author of 20 books and leads trips to Italy and Norway nearly every year.
CLASS #3: BUTTERMILK BISCUITS WITH SOLVEIG TOFTE - SATURDAY, FEBRUARY 1, 1-3pm
About the Class: Become the master of a tender buttermilk biscuit, and learn some valuable techniques applicable to many other styles of biscuit and quick breads. With one dough, our class will make classic plain biscuits (for sandwiches or gravy) as well as a version full of savory goodness, plus a quick cinnamon roll.
About the Instructor: Solveig and her husband, Martin Ouimet, have owned Sun Street Breads since 2011. She served on the Board of the Bread Bakers Guild of America for well over a decade. As a founder of the Intergalactic Bakers Federation and member of the Elite de la Boulangerie Internationale, Solveig believes bakers are the most fun and generous people in the world.
CLASS #4: FRUIT PIES WITH RACHEL ANDERSON - SATURDAY, FEBRUARY 8, 10am-Noon
About the Class: We’ll focus on “Pie Dough 101” with fruit-based pie filling and learn how to make an all-butter pie crust with a customizable fruit filling. Students will learn how to approach pies with easily adjustable ratios to make fruit pies all year round.
About the Instructor: Rachel Anderson has been the owner of Vikings and Goddesses since 2019. Since moving to Minnesota from New York City, Anderson has worked at notable restaurants such as Bellecour, Birchwood Cafe, and Revival.
